Aunt Linnie's corn casserole has been a beloved staple at our family Thanksgivings for as long as I can remember. It is a crucial part of my ideal Thanksgiving meal. Even when I can't be home to celebrate the holiday with my immediate family, I always make sure it is on our Thanksgiving table.
I have no idea how Linnie crafted this recipe, but I've always thought it was genius. There is something about the sweet cornbread flavor, mixed with all the other savory traditional fixings, that keeps me coming back for more. And for all of you food snobs out there, turning your noses up to the word "casserole": you are seriously missing out if you haven't tried this with your Thanksgiving meal. We have no problem serving it with the finest turkey, organic locally grown vegetables, and artisan breads. We certainly suggest it with our Amazing Mashed Potatoes and our Cheddar and Herb Popovers. Even the snobbiest of dinner guests love this stuff.
This corn casserole is one of those recipes that isn't the healthiest of choices, but it is worth every last calorie. It's so easy to make, and it adds a pop of gorgeous color to your holiday table. My fabulous Aunt Linnie will be bringing it to the family gathering this year as always, and I can guarantee there will be no leftovers.
Corn Casserole

Ingredients
- 1 can (8.75 oz) whole kernel corn, drained
- 1 can (14.75 oz) cream style corn
- 1 cup sour cream
- 2 eggs, beaten
- 1 stick unsalted butter, melted
- 1 box (8.75 oz) Jiffy corn bread mix
Instructions
- Pre-heat oven to 350 degrees
- Combine all ingredients in mixing bowl and stir together by hand
- Butter 1 ½ quart baking dish
- Place mixture in baking dish and bake for 35-40 minutes (or until top is golden brown)
I couldn't have done any better .. Perfecto!! Keep the tradition and recipe flowing every year .. no matter where you are.
Made this for Thanksgiving, it was super easy to make & VERY well received w/ the family! Ran out of butter, so only used half a stick & didn't feel like the taste/texture was compromised at all...still yummy, creamy, & rich!
