Heart-Healthy Apple Yogurt Cups are a delicious and easy way to keep those healthy resolutions.Like most people during the month of January, I have been trying to make a few small lifestyle changes in order to shed some unwanted pounds. These small changes include: getting up early and going to the gym, watching what I eat, and asking Keith to consider healthy options when menu planning. Unfortunately for me, that means limiting my intake of some of my favorite of his creations (i.e his Amazing Mashed Potatoes and glorious Buffalo Chicken Dip).
Fortunately for me, I actually like a lot of things that are good for me. These Heart-Healthy Apple Yogurt Cups are a good example of a breakfast I enjoy eating that doesn’t feel like a sacrifice. I have been making these for years, after discovering a version of them at the snack bar at my gym. Freshly shredded apple and a drizzle of honey give plain yogurt a sweet kick, and ground flaxseed adds texture, fiber and omega-3’s. This is a dish that tastes great, is good for you, and keeps you satisfied until lunch.
Now I am not going to pretend that Keith is enjoying these Apple Yogurt Cups with me. He is more likely to skip breakfast all together than eat yogurt and fruit out of pink bowls. He does support my efforts, however, by stocking the fridge with healthy options, hiding my temptations, and preparing meals mindfully. I am still waiting for a healthy version of his famous mashed potatoes….

Description
A simple and tasty heart-healthy breakfast
Ingredients
- 1 serving (5-6 oz.) non-fat vanilla or plain yogurt
- 1 apple
- 1 Tablespoon flaxseed meal
- 1-2 Tablespoons honey
Instructions
- Peel apple. Using a large holed grater, grate apple into bowl and set aside.
- Empty yogurt container into small bowl.
- Top with apple, honey, and flaxseed meal.
- Enjoy
