Coconut Lime Popsicles are a sweet vegan treat that extends the feeling of summer just a little bit longer.
Even though summer is winding down and the temperatures will start falling, there is still great weather ahead. This delicious dessert is perfect in warm weather, however it is just as good to enjoy sitting by a fire with family and friends. Lime and coconut pair perfectly, especially when used in a nice cocktail which is exactly the inspiration Jackie and I found to create this dessert. It was a nice warm evening and we were walking around the city when we happened upon a new "hipster" bar filled with people.
We had to go and see what all the excitement was all about. We weaved our way thru the crowd and found our way to the bar and asked the bartender what his specialty was. He began to tell us that everything was good, but that he made a mean coconut margarita. It sounded so intriguing that we had to give it a try. While it was unique and delicious, it reminded us more of a milkshake than a cocktail. This drink was exactly what Jackie and I needed to get our minds stirring; Coconut Lime Popsicles were coming to life.
This sweet treat is lacking the alcohol that the drink had in it, but it was not lacking the flavor and the gusto. The creaminess of the coconut milk along with sweet and tanginess of the lime combine perfectly in the mouth to make you feel like summer will never end. This is a good feeling, especially as the evenings start to cool. If you are like us, you are looking for ways to stretch summer just a little bit longer. Enjoying these with your eyes closed may transport you to a oceanside beach chair, sipping on a refreshing cocktail.
A light and refreshing anytime-of-the-year confectionary treat that everyone will love.
- 3 C coconut milk
- 3/4 C sugar
- 1/2 teaspoon salt
- 1 Tbs vanilla
- 1/2 C sweetened coconut
- 2 limes
- Whisk together the coconut milk, sugar, salt and vanilla in a large bowl and the place in freezer for 1 hour.
- Remove and add juice from 2 limes and freeze another hour until mixture starts to thicken.
- Add coconut and lime zest from the two limes and then pour into popsicle molds and place in freezer until set.
