These Dijon Glazed Pork Chops are a recipe developed by the chefs at Farm Promise® that we have happily “borrowed” to add to our weeknight menu. They have become a family favorite that we had to share with our Superman Cooks Family. They are so easy to make, can be on the table in thirty minutes, and taste absolutely delicious.
A lot of things have changed about our diets since the “meat and potatoes” days of our youth. We make sure there lots of vegetables on our table each night, the serving size of our mashed potatoes has been cut in half, and we consciously choose lean forms of protein like pork. Dijon Glazed Skillet Pork Chops are a good for you family meal that can be on the table in 30 minutes.

Ingredients
4 Farm Promise™ Pork Chops
1 Tbsp oil
½ cup mayonnaise
1½ tablespoons Dijon mustard
½ tsp fresh lemon juice
¼ cup apricot preserves
¼ cup sliced green onions
1 Tbsp soy sauce
Instructions
- Heat oil in a large skillet over medium high heat.
- Add pork chops and cook, turning occasionally, until lightly browned on both sides and cooked through. Remove chops from skillet and drain fat.
- Combine mayonnaise, mustard, lemon juice, apricot preserves, green onions, and soy sauce. Mix until creamy, then pour into skillet. Cook over low heat until sauce thickens a little.
- Return chops to skillet. Turn to coat, and heat until warmed through.
