Nothing makes us happier than a big bowl of pasta. It is always satisfying: for dinner, lunch, or (for some in our family) a mid-afternoon snack. However, Keith and I are both making a concerted effort these days to eat more healthy meals, adding more vegetables and lean protein to our diets. So unfortunately, we were going without one of our favorite foods in an effort to lose weight. That is until we discovered Modern Table pasta. When our friends at Modern Table sent us some of their rotini to play with, Keith immediately went to work. He has been experimenting a lot lately with different spices, and this seemed like the perfect project for him to use his new favorite spice, berbere. Berbere is a hot spice blend that is an integral ingredient in Ethiopian cuisine, and Keith discovered it while we were dining at Marcus Samuelson’s restaurant, Red Rooster. Ever since, he has been playing with it in his own cooking. A pasta recipe using this spice just seemed natural for Keith.
I admit, my traditional midwestern chef was a bit skeptical when he was presented with lentil-based pasta. He likes what he likes (traditional pasta made with durum wheat flour). But we were both pleasantly surprised at the texture and taste of this rotini. It cooks up beautifully (al dente), and absorbs sauces exactly like traditional pasta. We even served this meal to the kids, and they did not know the difference!
Keith used Modern Table Rotini to create this Earthy Gluten-Free Pasta with Lentils & Fresh Veggies. It’s a hearty and flavorful dish that satisfies on every level. A gluten-free and vegan entrée that is filled with earthy vegetables and fresh flavors, along with great texture.
- 1 8 ox Box Modern Table Rotini Complete Protein Pasta
- 1 14 oz can Fire roasted tomatoes
- 1/2 C chopped carrots
- 1/2 C chopped celery
- 1/2 C chopped onion
- 1 C cooked lentils
- 6 oz fresh mushrooms
- 8 oz fresh Brussels sprouts
- 2 cloves garlic
- 2 Tbsp olive Oil
- 1 Tbsp berbere spice
- salt and pepper to taste
- Preheat oven to 400°.
- Quarter the mushrooms and the Brussels sprouts and add to a mixing bowl with carrots, onions, garlic, and celery and mix.
- Toss with olive oil and berbere spice and spread over baking sheet and roast for 10 minutes.
- Cook pasta according to directions on the box.
- Heat the tomatoes in a large skillet and remove half of them and place on large serving platter.
- Add to remaining tomatoes, vegetables, lentils and pasta and toss together.
- Pour over the top of tomatoes and serve.
