Bacon Wrapped Green Beans

A great side dish for any meal, but especially perfect for a holiday feast.

Serves: 12-15 servings
  • 1 lb of bacon
  • 1 lb green beans
  • 3 egg yolks
  • 1 tbsp lemon juice
  • 1 stick of unsalted butter
  • Salt
  • Pepper
  • 1 tsp parsley
  1. Clean and snip ends off beans
  2. Cut bacon slices in half
  3. Wrap 4-6 green beans in bacon (as pictured)
  4. Place on cooling rack placed on top of sheet pan
  5. Preheat oven to 325 degrees
  6. Place beans in oven and cook until bacon is done ( about 15-20 min)
  7. To make the hollandaise sauce:
  8. Whisk egg yolks, lemon juice and a tsp of water until thick and the color changes to a light yellow.
  9. Over low heat cook the eggs while whisking constantly.
  10. Move pan on and off heat to avoid cooking too fast or you will get scrambled eggs.
  11. When mixture is light and frothy and the volume has increased, remove from heat
  12. Add melted butter a little at a time, while consistently whisking (this will form an emulsion and bring the sauce together).
  13. Once the sauce is a desired consistency, add salt and pepper to taste.
  14. Remove beans from oven and place on serving plate.
  15. Spoon hollandaise sauce over bean bundles
  16. Serve and enjoy
