A savory bread that can serve as an appetizer or a side dish

Serves: 8 portions
  • 1 package active dry yeast
  • 1 tbsp sugar
  • 2 tsp salt
  • 1¾ C warm water (110-115 degrees)
  • 2 Tbsp olive oil
  • 5 C flour, plus extra for kneading
  • For the basil pesto topping:
  • ¼ C olive oil
  • 6-7 basil leaves
  • 10-20 cherry tomatoes
  • salt
  • pepper
  1. In a large bowl, combine water, sugar and yeast. Mix with fork.
  2. Allow to rest for at least 10 minutes to activate yeast (it will foam).
  3. Combine flour and salt and mix into liquid mixture until it forms a dough ball.
  4. Remove it from bowl and place on floured surface and knead until dough is smooth and and just slightly tacky.
  5. Add 2 tablespoons olive oil to a clean bowl and roll dough ball to coat.
  6. Cover and allow to rest in a warm place until size has doubled.
  7. Pull small baseball size balls of dough and flatten to ½ in thick and place on baking sheet.
  8. Continue until completed. approx. 7-8 portions
  9. Cut tomatoes in half and place sporadically on top of dough and press down into dough.
  10. Continue until completed.
  11. Preheat oven to 425 degrees
  12. Chop Basil leaves very fine and blend with olive oil and brush on top of bread.
  13. Place in heated oven and bake for 20-25 minutes until golden brown.
  14. Remove and serve.
