These Red White & Blue Popsicles make for a simple, delicious, and healthy Fourth of July treat. Even as an adult, I could go to the grocery store, buy a box of popsicles, and devour the entire box in one evening. As a young boy, I loved popsicles and I remember my mom always kept a box for me in the freezer. Banana was my favorite flavor, or maybe it was the red white and blue bomb pops, I can't remember. When Jackie and I started talking about creating a frozen treat, the bomb pop happened to be the one that came to mind.
Jackie is my hero when it comes to eating healthy. For our sweet treat, she suggested making our own, all-natural "bomb pop" free of refined sugar and preservatives. This takes just a bit of patience in order to freeze the colorful, patriotic layers into place, but it is well worth it. Jackie is a big fan of coconut milk, and we found that this was a naturally sweet, creamy base for our popsicles. Add fresh berries and agave nectar and you have an awesome treat that any parent would be glad to eat. Hell, they may even share them with the kids since they are natural, scrumptious and healthier than the store-bought variety. Make these for the holiday, sit watch the fireworks, and enjoy a little all-American goodness.
Red White & Blue Popsicles
An all american rendition of a child hood favorite red and white and blue bomb pop.
- Total Time: 35 mins
- Yield: 6-8 popsicles 1x
Ingredients
- 1 pint fresh blueberries
- 1 pint of fresh strawberries
- ½ C plus 1 tablespoon agave nectar
- 13.5 oz can coconut milk
- 1 Tbsp vanilla
- ½ c water
Instructions
- In a small sauce pan add blueberries, ¼ C agave nectar and ¼ C water and cook over medium heat stirring to help break down berries. cook mixture for 10 minutes.
- Allow to cool in refrigerator.
- Clean sauce pan and add strawberries, ¼ C agave nectar and ¼ C water. Repeat cooking process as blueberries.
- Allow to cool in refrigerator.
- In a small bowl add Coconut Milk, 1 tablespoon agave nectar and vanilla and blend until combined.
- To assemble pops:
- Take blueberry mixture and blend in blender until smooth, pour into popsicle mold a third of the way. Freeze for 30 minutes.
- Pour coconut milk mixture into mold until ⅔rd filled. Freeze for 30 minutes.
- Blend strawberry mixture until smooth and fill mold with till filled. add sticks and freeze for at least 2 hours.
- Remove from mold and enjoy.
