- 1 pint fresh blueberries
- 1 pint of fresh strawberries
- 1/2 C plus 1 tbsp agave nectar
- 13.5 oz can coconut milk
- 1 Tbsp vanilla
- 1/2 c water
Instructions
- In a small sauce pan add blueberries, 1/4 C agave nectar and 1/4 C water and cook over medium heat stirring to help break down berries. cook mixture for 10 minutes.
- Allow to cool in refrigerator.
- Clean sauce pan and add strawberries, 1/4 C agave nectar and 1/4 C water. Repeat cooking process as blueberries.
- Allow to cool in refrigerator.
- In a small bowl add Coconut Milk, 1 tbsp agave nectar and vanilla and blend until combined.
- To assemble pops:
- Take blueberry mixture and blend in blender until smooth, pour into popsicle mold a third of the way. Freeze for 30 minutes.
- Pour coconut milk mixture into mold until 2/3rd filled. Freeze for 30 minutes.
- Blend strawberry mixture until smooth and fill mold with till filled. add sticks and freeze for at least 2 hours.
- Remove from mold and enjoy.
