Remember when you were a kid and the world came to a screeching halt with that sweet sound of the ice cream truck? Just one bite of these fruit sorbet bomb pops and you will be transported right back to that summer day in 19(huh-hmm). Our version of a "bomb pop" is made with fresh fruit straight from the farmer's market, and it does not require an ice cream maker. Best of all, it is guaranteed to please all of the kids in your life (even the big ones).
As with all of our recipes, it starts with the best ingredients. Keith and I woke up early on a Saturday morning and walked to the farmer's market. We selected some beautiful peaches and berries to make our fruit sorbet. We also used organic raw sugar. Keith found these cool popsicle molds at a discount store, and we were ready to go. Although Keith made three different sorbets, we chose peach and strawberry as our "bomb pop" filler. We liked the way these colors looked together.
We can't get enough of this sweet summer treat, and the best part about it is you don't have to wait for the ice cream man.
Simple Sorbet Bomb Pops
An all-natural healthy treat that is sure to cool you down and make you dream of those days as a kid waiting for the ice cream truck to come

- Yield: 12 popsicles 1x
Ingredients
- FOR STRAWBERRY SORBET:
- ¾ C sugar
- ¾ C water
- Juice of half a lemon
- 1 Quart of strawberries
- FOR PEACH SORBET:
- ¾ C sugar
- 1 C water
- Juice from half a lemon
- 4 ripe peaches (peeled and roughly diced )
- 12 Popsicle molds if making them as we did in the pictures
Instructions
- TO MAKE THE STRAWBERRY SORBET:
- In a small sauce pan heat the sugar and water together and cook over med-hi heat for about 5 minutes until sugar is dissolved.
- Squeeze juice from half a lemon and mix.
- Allow to cool to room temperature.
- Place strawberries in blender and blend till smooth.
- Add the sugar mixture to blender and mix, combining until strawberries are smooth.
- Fill Popsicle molds half way and freeze (If not making Popsicles transfer to freezer safe container and freeze for 30 minutes).
- After 30 minutes, mix sorbet with fork and continue to freeze until solid.
- When ready to serve, allow to sit out at room temperature for 10 minutes and mix with spoon (this will make for a smoother product).
- TO MAKE PEACH SORBET:
- In a large saucepan, cook sugar and water as above and ad lemon juice.
- Add peeled and diced peaches and cook for 10 minutes over medium heat.
- Allow to cool to room temperature.
- Transfer to blender and process until smooth.
- By now the popscicles should be frozen enough to add the peach sorbet.
- Fill mold and return to freezer until solid (If not making Popsicles transfer to freezer safe container and allow to freeze for 30 minutes. Remove from freezer and stir, then return to freezer till solid).
- When Popsicles are frozen, remove and allow to sit for 5 minutes for easy removal from mold or run under hot water for 15 seconds to loosen.
- You can use any type of fruit to make any flavor. Keep in mind that if using frozen fruit decrease the water by ¼ C.
- Rule of thumb is 24 ounces of fruit per C of sugar.
