For the Waffles
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 3/4 cup sugar
- pinch of salt
- 2 eggs
- 1¾ cups milk
- 3/4 cup melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/2 cup finely chopped pecans
For the Topping
- 8 ounces bacon
- 4 tablespoons butter
- 1 cup dark brown sugar
- 1/4 cup maple syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 C chopped pecans
Instructions
For the Waffles
- In a large bowl, combine both flours, baking powder, sugar and salt.
- In a separate bowl, whisk eggs, milk, melted butter, vanilla and almond extract until smooth.
- Pour wet ingredients into dry ingredients and stir until just combined. Do not over mix.
- Fold in the chopped pecans.
- Spoon batter into a preheated waffle iron and cook until golden brown.
For the Topping
- Dice bacon and cook in a medium sauté pan until slightly crisp (about 5-8 minutes).
- Add butter and stir until melted.
- Add brown sugar, maple syrup, and salt. cook over low heat until the sugar metlts and thickens slightly.
- Remove from heat and stir in vanilla and chopped pecans.
- Serve warm over waffles.
Notes
- The Maple Bacon Compote can be made ahead and reheated before serving.
- To reheat waffles, place in a toaster or 350°F oven until warm and crisp.
