Apple Cider Vinaigrette recipe

Apple Cider Vinaigrette is light, sweet and versatile. This recipe combines apple cider with herbs & chia seeds for a protein packed punch. 

Ingredients

  • 2 1/4 C apple cider
  • 3 sage leaves
  • 1/2 C olive oil
  • 1 1/2 Tbsp Bob's Red Mill Organic Chia Seeds
  • Juice of 1 lemon
  • 1 Tbsp honey
  • 1/2 Tsp garlic powder
  • 1/2 Tsp white pepper
  • 1/2 Tsp salt
  • 1 Tbsp fresh chopped parsley

Instructions

  1. Place 2 C apple cider into small sauce pan along with fresh sage leaves and cook over medium high heat for approximately 5 minutes or until cider has reduced by half, remove sage leaves and allow to cool in refrigerator.
  2. Take remaining 1/4 Cider and place in medium bowl and add chia seeds.
  3. When Cider has cooled prepare dressing by adding cider to a medium mixing bowl and add garlic powder, salt, pepper and lemon juice.
  4. Using a whisk, slowly add olive oil while whisking vigorously until combined.
  5. Add chia seed and cider mixture along with fresh chopped parsley.
  6. Refrigerate for up to 1 week and serve over your favorite salad. 
  7. We used fresh greens, sliced apples, beets and candied pecans.
