This Apple Cider Vinaigrette recipe is light, sweet and incredibly versatile. We used fresh apple cider, cooked down with herbs, to produce extraordinary flavor. We added organic chia seeds for a protein packed punch that's healthy and delicious.
why this recipe works
We teamed up with Bob's Red Mill to create a homemade salad dressing that has amazing flavor AND lots of nutrients. Organic Chia Seeds are "tiny powerhouses" packed with omega-3 fatty acids, protein, and fiber. And they add a nice texture to this Apple Cider Vinaigrette. We used fresh apple cider (rather than cider vinegar) in this recipe, which fills each bite with rich, apple flavor. You'll want to pour it on everything!

Ingredients
- APPLE CIDER: fresh, local apple cider works best
- SAGE: sage gives this dressing rich, fall flavor
- EXTRA VIRGIN OLIVE OIL: use the best you can afford
- CHIA SEEDS: we like Bob's Red Mill Organic Chia Seeds
- LEMON: juice of 1 lemon
- HONEY: we like local honey
- GARLIC POWDER
- WHITE PEPPER
- SALT: kosher salt is our go to
- FRESH PARSLEY: chopped
How to make apple cider vinaigrette dressing
- Place 2 cups apple cider into small sauce pan along with fresh sage leaves.
- Cook over medium high heat for approximately 5 minutes (or until cider has reduced by half)
- Remove sage leaves and allow to cool in refrigerator.
- Take remaining ¼ cup apple cider and place in medium bowl. Add chia seeds.
- When cider has cooled, prepare dressing by adding cider to a medium mixing bowl and add garlic powder, salt, pepper and lemon juice.
- Using a whisk, slowly add olive oil while whisking vigorously until combined.
- Add chia seeds and cider mixture along with fresh chopped parsley.
- Refrigerate for up to 1 week and serve over your favorite salad (we used fresh greens, sliced apples, beets and candied pecans).
