Cedar Plank Salmon is covered in a sweet and smoky spice rub and grilled to perfection. Get bold flavor in just 40 minutes with no mess!

Ingredients

  • 2 6oz salmon filets
  • 2 cedar planks
  • 1/4 C diced red pepper
  • 1/4 C diced yellow pepper
  • 1/4 C red onion
  • 1/2 C corn cut from the cob
  • 1/2 lime
  • 2 tbsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3 tbsp brown sugar
  • 1 tsp cumin
  • 2 tsp smoked salt
  • 1 tsp black pepper

Instructions

  1. Prepare seasoning rub by combining the smoked paprika, onion powder, garlic powder, brown sugar, cumin, smoked salt and black pepper.
  2. Prepare topping, by combining peppers, onion and corn and juice of lime and add 2 tsp of  spice mixture and mix to combine.
  3. Soak Cedar planks in water for 15 minutes to avoid them burning on the grill.
  4. Place salmon on cedar planks and cover generously with all of of the spice rub (patting it in with your hands). 
  5. Place salmon on grill and cook for 10-12 minutes until done or internal temperature of 125° F.
  6. Remove from grill and divide veggie mix over each filet and serve.
