- 2 6 oz filet steaks
- 1/4 c brown sugar
- 1 tsp coarse salt
- 1 tsp black pepper
- 2 tbsp espresso powder
- 1 tsp garlic powder
- 1 tbsp smoked paprika
- 1/4 c olive oil
Instructions
- Heat oven or grill to 400°F.
- In a medium bowl, mix together brown sugar, salt, pepper, espresso powder, garlic powder, and smoked paprika until well combined. (The rub can then be stored in an airtight container for future use).
- Brush all sides of steaks with olive oil, then coat generously with spice rub.
- For the grill: Place steaks on a hot grill. Cook about 4 minutes on each side for medium doneness. Adjust cooking time for desired doneness.
- For the oven: Heat a cast iron skillet over high heat until very hot. Sear steaks for 1 minute per side. Transfer skillet to oven and bake for about 5 minutes for medium doneness. Adjust time to your preference.
- Serve hot, with a pat of butter on top if desired.
