  • SALT + PEPPER: essential seasoning
  • OLIVE OIL: helps the rub stick to the steaks
  • BUTTER (optional): finish with a pat for extra richness

Instructions

  1. Make the rub: Combine brown sugar, espresso powder, smoked paprika, garlic powder, salt, and pepper.
  2. Prep the steaks: Brush with olive oil, then coat generously with the rub.
  3. Cook your way:
    • on the grill: about 4 minutes per side for medium
    • in the oven: sear in a hot skillet (1 minute per side), then bake at 400°F for 5 minutes.
  4. Finish & serve: Rest briefly, then top with butter if desired.

Which cut of beef works best?

How fine should the coffee grind be?

Bold, smoky, unforgettable. Coffee Rubbed Steak pairs tender filet mignon with rich espresso spice rub for a crust that's packed with flavor.

Ingredients

  • 2 6 oz filet steaks
  • ¼ c brown sugar
  • 1 tsp coarse salt
  • 1 tsp black pepper
  • 2 tbsp espresso powder
  • 1 tsp garlic powder
  • 1 tbsp smoked paprika
  • ¼ c olive oil

Instructions

  1. Heat oven or grill to 400°F. 
  2. In a medium bowl, mix together brown sugar, salt, pepper, espresso powder, garlic powder, and smoked paprika until well combined. (The rub can then be stored in an airtight container for future use).
  3. Brush all sides of steaks with olive oil, then coat generously with spice rub.
  4. For the grill: Place steaks on a hot grill. Cook about 4 minutes on each side for medium doneness. Adjust cooking time for desired doneness. 
  5. For the oven: Heat a cast iron skillet over high heat until very hot. Sear steaks for 1 minute per side. Transfer skillet to oven and bake for about 5 minutes for medium doneness. Adjust time to your preference.
  6. Serve hot, with a pat of butter on top if desired.
