This elegant gin cocktail is shaken with elderflower and egg white for a silky, lightly sparkling drink that's perfect for holidays and entertaining.

Ingredients

  • 2 oz. Empress 1908 Gin
  • 3 oz. elderflower tonic
  • 1 oz ginger simple syrup* (see recipe below)
  • 1 egg white
  • 3-4 dashes rosemary lavender bitters

Instructions

  1. Using a coupe glass, add ice and water to chill while mixing drink.
  2. Fill a cocktail shaker half way with ice. 
  3. Add gin, ginger simple syrup, bitters, and egg white.
  4. Cover and shake vigorously for 1 minute.
  5. Pour the ice and water out of the chilled glass and add tonic. 
  6. Remove the lid from shaker and strain the mixed drink through a fine strainer into the glass.
  7. Garnish with a lemon 

Notes

  • to make ginger syrup: combine 2 tablespoons sugar and a 2-inch piece of fresh ginger (halved) into a heatproof bowl. Pour ½ cup boiling water over top, let cool, then strain. Store in an airtight container in the refrigerator for up to 5 days.  
  • shaking tip: for the best frothy top, shake hard and don't rush it. A full minute of vigorous shaking makes a noticeable difference in the texture.
  • serving suggestion: serve this gin cocktail immediately after shaking for the smoothest texture and best presentation.
