When I first started cooking for Jackie, she wasn't big on leftovers. This recipe quickly changed her mind. It's one of those recipes that makes you plan ahead on purpose.
The mushrooms are what tie it together. They're sautéed in butter until deeply browned, then stirred into the broth with flour to thicken. How to make beef stroganoff
If you already have leftover roast beef, skip to step 2.
- Make the chuck roast. Season with salt, pepper, and rosemary, sear on all sides, then braise in a Dutch oven at 350°F for 2½ to 3 hours until fork-tender. Reserve all liquid and vegetables - they become the base of the stroganoff.
- Build the broth. Combine the reserved roast liquid, beef base, and tomato paste in a stockpot. As it heats, smash the cooked vegetables into the broth with a fork. Bring to a gentle boil.
- Cook the mushrooms. In a separate pan, melt butter over medium-high heat and sauté mushrooms until browned, about 5 to 7 minutes. Add flour and stir to combine.
- Add the noodles. Stir egg noodles into the simmering broth and cook until tender, about 8 minutes. The noodles absorb the broth as they cook, thickening the sauce naturally.
- Bring it together. Stir in the mushroom mixture, then add the shredded beef. Remove from heat and stir in sour cream. If the sauce is too thick, add a splash of broth or milk. Season with salt and pepper to taste.

Instructions
To make the chuck roast (skip if using leftovers):
- Preheat oven to 350°F.
- Pat the chuck roast dry and season evenly with salt, pepper, and rosemary on all sides.
- Heat a heavy duty skillet over high heat. Sear the roast on all sides, turning as needed with tongs.
- Transfer to a Dutch oven and add onion, celery, carrots, and garlic along with enough water to come halfway up the roast.
- Cover and roast for 2½ to 3 hours until fork-tender.
- Remove roast and shred the meat. Reserve all liquid and vegetables - these become the base of your stroganoff.
To make the stroganoff:
- In a medium stockpot, combine the reserved roast liquid with beef base and tomato paste. Add water if needed to make 1 quart. As it heats, use a fork to smash the cooked vegetables into the broth. Bring to a gentle boil.
- While the broth heats, melt butter in a sauté pan over medium-high heat. Add mushrooms and cook for 5 to 7 minutes until browned. Add flour and stir to combine.
- Add egg noodles to the simmering broth and cook until tender, about 8 minutes.
- Stir in the mushroom mixture until the sauce reaches a gravy-like consistency. If it's too thick, add ¼ cup water or milk.
- Add shredded beef and stir in sour cream. Season with salt and pepper to taste. Serve warm.
