Brussels Sprouts Haluski is a modern take on a traditional one pot meal. This simple, yet flavorful dish only takes 30 minutes!

What is Haluski?

Haluski is a simple Eastern European dish, essentially fried cabbage and noodles.  There are variations by country ("Halushki", "Halusky", "Hallushky"), but the most traditional version uses dumplings (or spaetzle) instead of noodles. This recipe honors that tradition, using delicious Brussels Sprouts.

This one pot recipe is so easy to make, and it's a great way to use leftover Roasted Brussels Sprouts or cabbage. In Pittsburgh, Haluski is a staple on the menu at many restaurants. It's almost as common as spaghetti and meatballs.

Ingredients

  • BRUSSELS SPROUTS: fresh Brussels Sprouts replace traditional cabbage for this recipe.
  • EGGS: Large or extra large eggs
  • FLOUR: we recommend AP flour for this recipe
  • MILK: whole milk or 1% milk
  • BUTTER: we recommend salted butter
  • SALT: kosher salt or sea salt
  • PEPPER: freshly ground black pepper

Instructions

Make the Spaetzle (dumplings):

  1. Bring large pot of water to boil.
  2. In a mixing bowl, whisk eggs then add flour to make a thick paste.
  3. Add milk. Combine until mixture resembles a thick pancake mix.
  4. Place large hole colander over pot of boiling water and add mixture to colander.
  5. Using a spatula, work the mixture so it drops through the holes of the colander into water. Continue until all mixture is in water
  6. When mix hits water it will form the spaetzle
  7. Remove from boiling water and rinse with cold water
  8. Place spaetzle in bowl and refrigerate.

Make the Haluski:

  1. Wash and remove stems from brussels sprouts. Slice into ⅛" pieces.
  2. In a stock pot, add butter and melt.
  3. Add sprouts and cook until browned and tender, stirring as needed.
  4. Add spaetzle and continue to cook until spaetzle has browned a little.
  5. Add salt and pepper and enjoy!

Variations

  • EGG NOODLES: no time to make Spaetzle? Substitute store-bought egg noodles.
  • TRADITIONAL: use red cabbage instead of Brussels Sprouts for authentic Haluski
  • BACON: add some crispy bacon pieces or pancetta for full-bodied flavor
  • ONIONS: sautéing slice onions with the Brussels sprouts add depth of flavor

Storage

Store leftovers in an airtight container for up to 3 days.
Reheat in a sauté pan or microwave. Do not freeze.

Top tip

Make sure Brussels Sprouts are cooked well for optimum flavor. They should be slightly browned and tender, not crunchy.

FAQ

Can I make this recipe with red cabbage?

Yes! Traditional Haluski is made with red cabbage or green cabbage.

I don't have time to make Spaetzle. What can I use instead?

Store-bought frozen Spaetzle or packaged egg noodles work great for this recipe. Just cook them according to package directions and add them to the Brussels sprouts mixture.

Can I make Haluski ahead of time?

Yes, this recipe can be made ahead and refrigerated for up to 3 days. We recommend reheating it in a sauté pan.

  • 4 eggs
  • 3 Cups flour plus extra if needed
  • ½ C milk
  • ½ C butter
  • Salt
  • Pepper
