Empress Gin Fizz
This gin fizz recipe is our festive twist on the classic cocktail, made with Empress 1908 Gin, cranberry, and ginger beer.

What is a Gin Fizz?
A gin fizz is a classic cocktail built around gin, citrus, and something sparkling. It's light, refreshing, and endlessly adaptable, which is why its been a favorite for generations. We love it as a base cocktail because it's simple enough to riff on, but structured enough to stay balanced, making it the perfect starting point for festive twists like this one.
Why Empress 1908 Gin Works So Well Here
We chose Empress 1908 Gin for this gin fizz because it's bright, botanical, and plays well with sparkling mixers. It's also a favorite when we're hosting. Keith loves to have a cocktail going while he's cooking, often mixing a drink for guest, like our Sparkling Purple Gin Cocktail or Empress Gin Frost Fizz, and keeping one nearby to sip while putting the finishing touches on dinner.
We created this recipe with that moment in mind. It's sweet, easy, and meant to be enjoyed before the meal with a small nibble like cheese or cranberries. Unlike a classic Tom Collins or Sloe Gin Fizz, this version is sweetened with ginger beer and a simple cranberry reduction for a more festive, approachable feel.

Ingredients You'll Need
- EMPRESS 19O8 GIN: botanical and floral, with a natural indigo hue that shifts color when mixed with citrus.
- FRESH CRANBERRIES: simmered into a quick reduction that adds sweetness, color, and a festive feel.
- SUGAR: balances the tart cranberries and helps create a smooth, syrupy base.
- ORANGE: adds a subtle citrus flavor and helps trigger Empress Gin's signature color change.
- GINGER BEER: brings fizz, warmth, and just enough sweetness to balance this drink. We like using Fever-Tree Ginger Beer for its clean, bold ginger flavor that doesn't overpower the cocktail.
- FRESH THYME: used as a garnish for a lightly herbal finish.
- ICE: for chilling and serving.

- Add the gin, ginger beer, and cranberry mixture: Pour gently to preserve the fizz.
- Stir lightly: Just enough to combine without flattening the bubbles.
- Serve and garnish: Pour into glasses and finish with fresh thyme and cranberries.

Empress Gin Fizz recipe

- Total Time: 35 minutes
- Yield: 6 drinks 1x
Ingredients
- 2 cups fresh cranberries
- 1 cup sugar
- 1 orange
- 6 ounces Empress 1908 Gin
- 16 ounces ginger beer
- 6-8 fresh thyme sprigs
Instructions
Prepare the cranberry mixture (at least an hour ahead):
- In a medium saucepan, combine the cranberries, sugar and ¾ cup water.
- Cut the orange into ¼-inch slices and add 2 of them to the pan.
- Cook over medium heat, stirring often, until the berries break down and the mixture thickens to a syrup consistency about 5-7 minutes
- Remove the orange slices and refrigerate the cranberry mixture until completely cooled.
Make the drinks:
- Fill a 32-ounce pitcher with ice.

This looks awesome! What ginger beer do you recommend?
Hi Amanda!
Thanks so much for stopping by! We are currently OBSESSED with this cocktail, so we hope you give it a try!
I have been buying Reed's Zero Sugar Extra for that real ginger pop (without the calories). We also like the Trader Joe's Ginger Beer.
Please let us know how it turns out!!
I made it and really enjoyed it. We went with the FeverTree ginger beer since I live in Ontario Canada and would not be able to grab the ones you suggested easily. Thanks so much!
A bit too sweet. Next time I’ll use tonic water or Perrier.
Thanks for the feedback Emily. We love the sweetness, but we understand that it's not for everyone. That's why we suggested using tonic water as an option in our recipe tips. Please let us know if you try that version and you like it better! Cheers!
For the cranberry mixture, is water needed to thin out the consistency? Looking forward to trying this cocktail!
I had to otherwise I had thick cranberry jelly. I also pureed it for a smooth texture.
Thanks so much, you are correct, that was a miss on my part when I wrote the recipe. I have updated the recipe.
Thanks so much and sorry for the delay, that was a miss on my part. I have since corrected the recipe.
