Summer is a perfect time for grilling. Simply turning on your oven makes the house too hot to handle. But did you know you could use your grill to make the most amazing, flavorful dessert? We created this Smoky Peach Crumble (in a cast iron skillet) for our friends at Bob's Red Mill, using their Whole Grain Oat Flour and Organic AP Flour. High quality, whole grain ingredients give this Smoky Peach Crumble its unique and unforgettable flavor. Top it with a generous scoop of Peanut Butter Ice Cream!
HINT: This recipe could be made just as easily in the oven (like our warm Strawberry Peach Crumble) or Cherry Pie, but making it on the grill adds a smokiness which finishes this sweet, summery dish off perfectly.

Ingredients
For the peach filling:
- PEACHES: fresh peaches, peeled and sliced (we like Chambersburg Peaches)
- SUGAR: granulated sugar, regular or organic sugar
- CINNAMON LIQUEUR: (optional) We like Fireball Whiskey
- CORNSTARCH: we used Bob's Red Mill Cornstarch
- LEMON: fresh lemon
- CINNAMON: ground cinnamon
- NUTMEG: ground nutmeg
- SMOKED PAPRIKA: this is what gives the crumble a smoky flavor
- SALT: sea salt or Kosher salt
For the crumble topping:
- AP FLOUR: we used Bob's Red Mill Unbleached AP Organic Flour
- OAT FLOWER: we used Bob's Red Mill Whole Grain Oat Flour
- BROWN SUGAR: light brown sugar or dark brown sugar
- CINNAMON: ground cinnamon
- BUTTER: unsalted butter works best
- BACON: (optional) cooked bacon, chopped into small pieces

Instructions
- PREPARE PEACHES: Slice peaches. Place slice peaches in a medium bowl and add lemon juice. Set aside for 5 minutes.
- PREHEAT GRILL to 350°
- SWEETEN THE PEACHES: Add sugar and spices to peaches and combine.
- MAKE THE PEACH FILLING: Combine cornstarch and cinnamon liqueur, mixing until starch is dissolved (use water if omitting liquor). Add mixture to peach mixture and stir until combined.
- POUR INTO SKILLET: Pour mixture into a 7" cast iron skillet.
- ADD THE CRUMBLE TOPPING: Top peaches with the crumble topping (see recipe below), then top with bacon pieces.
- GRILL: Place skillet on hot grill and cook for 25-30 minutes or until top is brown and bubbly.
- COOL: Remove crumble from grill and allow to cool for at least 10 minutes before serving.

How to make crumble topping
- In a medium bowl, combine flours, sugar, and cinnamon and mix.
- Cut butter into small pieces. Using your fingers, add to flour mixture and pinch butter through flour to form crumbly pieces.
- Place on top of peach filling before baking.
Substitutions and variations
- VEGETARIAN: omit the bacon for a vegetarian peach crumble
- BAKED: this recipe can easily be baked in the oven if you choose. Follow the same steps and bake at 350°F for 25-30 minutes

- 2 C fresh sliced peaches
- ¼ C sugar
- 2 oz cinnamon liquor (optional)
- 1 Tbsp Bobs Red Mill Cornstarch
- ½ Lemon
- ½ tsp cinnamon
- ½ tsp nutmeg
- ½ tsp smoked paprika
- ⅛ tsp salt

- ¾ C Bobs Red Mill Whole Grain Oat Flour
- ½ C brown sugar
- ½ tsp cinnamon
- 4 oz butter
- ¼ C bacon, chopped

- baking in a conventional oven is fine too! Just follow the instructions and bake at 350° for 25-30 minutes
- cinnamon liquor is optional! You can substitute water for the the liquor and get great flavor.
