Caprese Pork Sliders are a lean mini burger bites, bursting with summer fresh flavor and slathered with Basil Aioli.
Summer is the best time of year: when tomatoes actually look like tomatoes, fresh herbs are growing on the back deck, and most of our meals are made on the grill. This Caprese Pork Sliders recipe, from the executive chefs at Farm Promise®, is perfect for the summer season. It's easy to assemble, and makes use of tomatoes and herbs that grown in our garden. Like our Ultimate Umami Burgers and Grilled Turkey Burgers, it's a leaner patty that's not lean on flavor.

Ingredients
- GROUND PORK: Farm Promise® ground pork
- MAYONNAISE: we like Hellman's Mayonnaise, Duke's Real Mayonnaise or light mayonnaise
- LEMON JUICE: fresh squeezed lemon juice
- GARLIC: fresh garlic cloves, minced (for basil aioli)
- GARLIC POWDER: fine garlic powder
- SALT: kosher salt or sea salt
- PEPPER: coarse ground black pepper
- LEMON ZEST: zest from lemon
- BASIL: fresh basil leaves for garnish and chopped basil leaves (for basil aioli)
- MOZZARELLA: fresh mozzarella cheese, sliced for topping
- TOMATO: we like vine-ripe tomatoes or Roma tomatoes, sliced for topping
- BUNS: we used sesame slider buns

Instructions
- Make Basil Aioli: combine mayonnaise, lemon juice, garlic, lemon zest, and chopped basil. Mix thoroughly and refrigerate for 30 minutes.
- Heat Grill.
- Make Slider Patties: season ground pork with garlic powder, salt, and pepper. Form three 2 oz. slider patties.
- Grill Patties for 6-7 minutes, or until fully cooked, flipping half way through grilling.
- Top with Cheese: about a minute before grilling is done, top with mozzarella cheese.
- Toast Buns: right before serving, toast sesame buns on the grill for about a minute.
- Dress the Burgers: place sliders on toasted buns, then pile high with tomato, fresh basil, and basil aioli.

Storage
- STORE LEFTOVER SLIDERS (minus buns and toppings) in an airtight container in the refrigerator for up to 5 days.
- STORE BASIL AIOLI in the refrigerator an airtight container for up to 5 days.
- FREEZE: freeze uncooked patties for up to 3 months in an airtight container. We recommend wrapping each one separately in plastic wrap. Thaw them completely in the refrigerator before you're ready to serve, then follow cooking instructions.
