What is a Taquito?
Spanish for "small taco" a taquito (flauta, tacos dorados, or rolled taco) is a Mexican food that consists of a rolled up tortilla containing filling (chicken, cheese or beef). If you like Pulled Pork Tacos, you'll love this recipe.
For our Chicken Taquitos recipe, we fill corn tortillas with chipotle baked chicken and a creamy herb cheese. Then we pan fry them to make them crispy. It's a crunchy, savory bite that has become a family favorite.

Ingredients
- CHICKEN BREAST: fresh boneless chicken breasts
- ADOBO SAUCE: canned adobo
- CHIPOTLE SAUCE: canned
- GARLIC: whole garlic cloves
- LIME: juice of 1 lime
- CREAM CHEESE: regular cream cheese or neufchâtel cheese
- POBLANO PEPPERS: roasted poblano pepper to bring out the flavor
- JALAPEÑO PEPPERS: roasted jalapeno peppers
- GREEN ONION: green onion (scallion), chopped finely
- SOUR CREAM: regular sour cream or reduced fat sour cream
- CILANTRO: fresh cilantro, chopped
- TORTILLAS: we like 6" Corn Tortillas for street taco size taquitos. You can use flour tortillas as well.
- OIL: vegetable oil, corn oil, or any neutral oil for frying.

Instructions
- Make the Taquito Filling: Place chicken in an oven safe dish. Cover with adobo sauce, chipotle sauce, lime juice and garlic cloves and cook covered in a 350° F oven for 30 minutes.
- Roast the Peppers: Place peppers on baking sheet and bake in oven (along with chicken). When the peppers are done cooking, remove them from oven and finely chop. Combine them with cream cheese, sour cream, green onions and chopped cilantro.
- Shred the Chicken: When chicken is done remove and allow to cool for 5 minutes. Using 2 forks, shred chicken and mix to absorb sauce (this can be done ahead to save time).
- Prepare the Pan for Frying: In a large skillet, cover with as much vegetable oil is needed to cover bottom.
- Assemble the Taquitos: Spread cream cheese pepper mixture on tortilla and top with ¼ chicken mixture. Roll tortilla in a cigar like look. Continue until all tortillas are wrapped.
- Fry the Taquitos: Pan fry, carefully in oil turning often until golden brown (approximately 3 -4 minutes). Add oil 2 tablespoon at a time as needed. Place cooked taquitos on a paper towel lined plate to drain.
- Serve: Top with your favorite condiments (we like sour cream, avocado, and salsa).
Top tip
While most taquitos are deep fried, we prefer this pan fried version because it's less oily and a little bit better for you.

Make Ahead: Make the filling one day ahead and store it in the refrigerator until you are ready to make the taquitos.

Okay.. definitely some white people s***. Not ‘authentic’ I wouldn’t say. The cream cheese was just not our favorite. The chicken filling was actually really good tho!
