Get out those glasses and salt the rims!! It’s Cinco de Mayo, and we have the perfect Pink Drink to celebrate. We love all things Cinco de Mayo here at superman cooks (especially our Pink Señorita Cocktails). Not only is this holiday a good excuse to drink a margarita (or two), but it also involves all kinds of Mexican food, which you'll never hear us complain about.

    Ingredients:

    • TEQUILA: 2 ounces
    • TRIPLE SEC (or any ORANGE LIQUEUR): 1 ounce
    • FRESH LIME JUICE: 1 ½ ounces (we prefer fresh squeezed juice)
    • POMEGRANATE JUICE: 1 ½ ounces (we prefer fresh, but you can also use bottle pomegranate juice)
    • AGAVE NECTAR: 1 teaspoon
    • KOSHER SALT: ¼ cup
    • LIME ZEST: 1 tablespoon
    • POMEGRANATE SEEDS (POMEGRANATE ARILS): 1 tablespoon

    How to make Pomegranate Margaritas:

    1. Before juicing your limes, use a zester to remove just the outer green skin and set aside.
    2. In a cocktail shaker, add tequila, orange liqueur, lime juice, and agave nectar. Fill shaker with ice. Place top on and shake vigorously for 20 seconds.
    3. Mix kosher salt and lime zest in a shallow dish big enough to dip the top of glass in.
    4. Using a lime wedge, wet the rim of the glass and dip glass into salt and zest mixture.
    5. Fill glass with ice.
    6. Strain the margarita mixture over ice, add more lime zest and pomegranate seeds.
    7. Garnish with lime wheel and enjoy.

What to serve with margarita cocktails:

    • Crispy Tortilla Chips & Fresh Pineapple Salsa
    • Spicy Chicken Tacos
    • Chipotle Chicken Taquitos
    • Smoky Black Bean Quesadillas

    FAQ's:

How do you get the PERFECT PINK hue?

Use fresh pomegranate juice instead of bottled (it's not as dark!)

How do you get the most amount of juice from a lime?

Roll the lime on a hard surface before juicing. It brings the juice to the surface!

Can I use sugar instead of agave nectar?

Absolutely! Granulated sugar, honey, or stevia works for this recipe. Adjust the amount to suit your taste.

[…] I don't know if it's a good or a bad thing that we discovered the Iceberg Margarita on the second day of vacation, but it quickly became our drink of choice during our time in Mexico. The beer adds a bit of saltiness and punch; it balances the sweetness of the fresh lime and triple sec.   Thankfully, my devoted superman had lots of opportunity to sample this new drink, furiously determined to re-create it upon our return home. Now that summer is here, he has perfected the recipe just in time for our Memorial Day cookout. I have a strong feeling that we will be enjoying these Iceberg Margaritas on our patio all summer long. checkout some of our other favorite cocktails: Pink Señorita, Spiked Mango Iced Tea, Pink Pom Pom Margaritas […]
