Bologna or Baloney sandwich?
We spell it "Bologna" (like the Italian city), but we say it "baloney" like true midwesterners. Whichever way you pronounce it, this is no ordinary baloney sandwich! Inspired by one of my favorite sandwiches, the Monte Cristo, I placed all of the savory ingredients between two slices of French toast to create an extraordinary bite. Like our famous Buffalo Chicken Sandwich, this sandwich is anything but boring.

Ingredients
- BREAD: 2 thick slices of bread (we like Brioche, Challah or Italian style bread)
- EGGS: large or extra large eggs
- MILK: whole milk, skim milk, or nut milks work
- SUGAR: granulated white sugar
- CRUSHED RED PEPPER
- ROSEMARY: dried rosemary
- DRIED PARSLEY
- ROASTED RED PEPPERS: peppers, cut into strips (we used yellow peppers too)
- AMERICAN CHEESE: we like American, but you can use cheddar cheese or provolone cheese
- BEEF BOLOGNA: thick slices of bologna
- BUTTER: unsalted butter or salted butter

The best bologna sandwich recipe
This fried bologna sandwich recipe was inspired by childhood memories and a favorite sandwich in my hometown. I loved going to my Grandma's house because she served her old fashioned potato salad, cold cuts and cheese. At Grandma’s, my standard sandwich was beef bologna, brick cheese and salami, topped with mayonnaise and potato chips right on the sandwich.
As a kid, I thought bologna was a special treat only available at Grandma’s house. It wasn’t until later that I realized my favorite meat was not as gourmet as I thought. Rather, most people viewed bologna as "poor man’s lunch meat." This is far from the truth!

Instructions
- In a mixing bowl, combine eggs, parsley, red pepper, rosemary, and sugar and mix until sugar is dissolved. Add milk and mix.
- In a small sauté pan, heat bologna until browned on both sides and set aside.
- Using a larger fry pan, heat butter over medium heat until melted.
- Place bread in egg mixture until coated.
- Place bread into sauté pan and cook until golden brown (about 2 minutes).
- Flip bread and top with 2 slices cheese on each piece of bread.
- Add peppers and bologna and heat until cheese is melted.
- Combine to make sandwich. Cut in half and serve.
Substitutions and variations
- Bread: we like thick sliced Challah bread or Italian bread for this recipe. You can use any kind of bread, as long as it's sliced thick (Texas Toast style).
- Bologna: we like deli-sliced beef bologna, but you can use any kind (pork bologna works fine)
- Cheese: substitute cheddar cheese or provolone cheese for American cheese.
- Spreads: add mayonnaise or mustard for an extra kick
What to serve with bologna sandwiches
- As I kid, I ate bologna sandwiches with Dad's Hillbilly Potato Salad. And I still prefer that combination today.
- A cup of Cream of Tomato Soup also complements this sandwich perfectly.
- Serve it with a Crunchy Asian Salad for a balanced meal.
- Go traditional and add some salty potato chips or Cool Ranch Crackers!
