We are both tying to eat more consciously, choosing healthier food that nourishes us as much as it satisfies.I am always asking Keith to come up with some new, healthier meal options that change up our dinner routine. When he served me this Lemony Shrimp Pasta, it was like a ray of sunshine on a cloudy day. The plump, grilled shrimp combined with baby broccoli and finished in a light lemon butter sauce is my kind of meal. Served on a bed of fine angel hair pasta, this dish is light and healthy but super satisfying.Lemony Shrimp Pasta is great because it’s easy to assemble and can be on the table in no time flat. Add some sunshine to you weeknight dinner routine! Lemony Shrimp Pasta is a pescatarian family meal made with angel hair pasta that is healthy & satisfying.
1 lb angel hair pasta
16–20 fresh shrimp (we used tail on 16–20 ct black tiger)
2 cloves garlic
6 oz baby broccoli
1/4 c olive oil
4 oz fresh parmesan cheese
1/4 C sliced almonds
2 tbsp butter
fresh parsley for garnish
Boil 4 quarts salted water in large stockpot, adding angel hair when water is at a full boil. Cook for 4-5 minutes or until al dente.
In a large sauté pan add oil and heat over medium heat add add chopped garlic cloves.
Add shrimp and cook for 4-8 minutes or until shrimp are pink and opaque. Remove from pan.
Add broccoli and cook for 4 minutes
When pasta is done cooking, drain the pasta while reserving 1 C of the pasta water.
Using the same sauté pan, add pasta, butter, juice from two lemons and toss together over medium heat.
Add pasta water, and broccoli and cook for 2-3 minutes.
Chop almonds and toss into pasta and serve.
Garnish with parmesan cheese.
Salt and pepper to taste.
